Perfect beets from Amaltheia Organic Dairy make perfect pickles

Nate Brown showed off his photo-worthy beets when we visited his family’s farm, Amaltheia Organic Dairy. For 18 years, the Brown family has been making goat cheese at their farm in Belgrade, Montana.

Today, Amaltheia offers a variety of flavors of chevre — olive medley, garlic and chive, sun-dried tomato, even a smoked chevre — as well as Feta and ricotta. In addition, they produce a number of products from their whey-fed pigs — bacon, spare ribs, ground pork, a range of sausages … The farm also sells compost and it’s the rave reviews their compost received from area gardeners that motivated Nate to add vegetables to the mix. In 2010, he began growing in a greenhouse — today he has three acres of root vegetables under cultivation as well as five high tunnels.
