This butcher shop is mobile

At Left Bank Butchery in Saxahapaw, North Carolina, Ross Flynn is focused on cutting meat to order and educating his customers on how to cook those cuts — opportunities that are diminished when selling vacuum-sealed pre-cut sausage, steaks and chops like what’s typically on offer at local farmers’ markets. Not satisfied with going the more standard tent-and-cooler route, Ross partnered up with Cane Creek Farms’ Eliza MacLean to create a mobile butcher shop.

They renovated a food truck to act as a true mobile butcher shop, with a display window showing off the week’s fresh options, stocked from the shop that morning. The pair work the window together, taking orders, cutting bacon, steaks and chops to order, packaging them up and talking with the customers about how they’ll cook that week’s haul. It’s an approach you find frequently in European open-air markets and is beginning to catch on here in the States.

You’ll find the Left Bank Butchery mobile butcher shop at the Carrboro Farmer’s Market every Saturday from 7am to noon and on Wednesdays from 3 to 6pm.
