A stop at Miller Union with James Beard-winning chef Steven Satterfield

Steven Satterfield is well-known for his dedication to sourcing from Georgia farmers and makers. We stopped by Miller Union, his restaurant in Atlanta, Steven demonstrated a number of dishes showcasing Oliver Farms oils.

Steven describes the peanut oil as having a “green peanut” flavor. When most of us think of the flavor of peanuts, it’s peanuts that have been roasted. Clay’s oil is made from fresh, un-roasted peanuts and that “green” flavor comes through in the oil. Steven layered peanuts in various forms in his dishes, from boiled to roasted to the Oliver Farm oil. The peanut is a symbol of Georgia agriculture and in Steven’s hands, the humble legume is given the opportunity to shine and display its range of flavors.
