RECIPE: Sesame Soba Noodles with Kelp
Ginger and cilantro mingle with tahini and sesame oil in this quick-and-easy soba noodle dish enhanced with kelp.

| Ingredients |
- 8 to 10 ounces soba noodles 
- 1/4 cup diced, peeled carrots 
- 1/4 cup roughly chopped Atlantic Sea Farms Ready-Cut Kelp 
- 2 Tbsp thinly sliced scallion 
- 2 Tbsp chopped cilantro 
- 1/4 cup reserved noodle water 
- 3 1/2 Tbsp tahini 
- 2 tablespoons soy sauce 
- 1 tsp Sugar In the Raw 
- 1 Tbsp rice vinegar 
- 1 1/2 tsp hot sauce 
- 1 tsp grated fresh ginger 
- 1 tsp sesame oil 
| Preparation | In a small pot, cook soba noodles according to package directions, drain, reserving 1/4 cup cooking water. Add noodles to a bowl with carrots, kelp, scallions and cilantro. In a small bowl, combine dressing ingredients, including reserved water, and mix well. Pour over noodles and toss until coated.
