RECIPE: Superfood Kelp Salad
Pomegranate seeds add vibrant color and a tart pop to this superfood salad that will be at home on any table. Perfect for potlucks because the sturdy ingredients won’t wilt.

| Ingredients |
- 3 bunches Lacinato kale 
- 1 head red cabbage 
- 7 carrots, shredded 
- 1 lb Atlantic Sea Farms Ready-Cut Kelp 
- 1 lb shelled edamame 
- 2 cups pomegranate seeds 
- Good quality olive oil 
- Sea salt to taste 
- 1 cup goji berries 
- 1/2 cup pine nuts 
| Preparation | Thinly slice kale and cabbage, and mix with kelp, edamame and pomegranate seeds. Lightly sprinkle olive oil, add salt, and toss. Garnish with goji berries and pine nuts.
