Legal Sea Foods is a Boston-based company that began more than 60 years ago as a simple fish shack. Today, the restaurants can be found from Massachusetts to Virginia and executive chef Rich Vallente relies on unique products like kelp to keep his menu fresh.

The sheets of fresh kelp that Atlantic Sea Farms cuts and wraps by hand are a high-end product that is sourced directly to chef Vallente. He uses sheets of the fresh kelp to wrap salmon that’s simmered in a lemongrass and ginger broth and served with rice noodles, shrimp, mushrooms and bok choy. Atlantic Sea Farms’ seaweed salad can be found tossed with smashed cucumbers in a refreshing salad and served alongside grilled fish with kim chi and rice.
