Bread and beer at Jester King Brewing

Barton Springs Mill acts as a grain hub, connecting bakers, brewers, distillers and chefs directly with locally grown grains. It’s this direct connection that was lost as the network of small mills disappeared as our food became industrialized over the last century. Jester King Brewery is dedicated to local sourcing in everything it makes, from its incredibly famous farmhouse ales and barrel-aged wild ales to the loaves of bread pulled from its on-site kitchens.

The brewers at Jester King create beers that are a direct reflection of their environment in the hill country of Texas, using well water, local fruits and herbs, foraged plants and native yeast and bacteria to brew unique beers that are inspired by ancient European farmhouse styles. In the brewery’s kitchen, Barton Springs’ flour is used in pretzels, pizzas, breads and cookies and many of the ingredients used throughout the menu are grown on the Jester King Brewery farm, which includes a trail so visitors can explore (and meet the goats!).
