Kō Hana's agricole rum is field-to-glass

How is Kō Hana’s varietal agricole rum made? The complex flavor lies in the product’s simplicity. There are dozens of sugarcane varieties under cultivation at Kō Hana. When fully ripe, each variety is hand harvested and pressed in the field. That fresh-pressed juice is taken back to the distillery immediately, where it is fermented and then distilled. Some of the distillates are aged in wooden barrels, and some are simply bottled, a clear, sparkling reflection of the flavors found in each variety of cane.
