Matty Kua has created a playful cocktail menu that builds on the flavors coming from the kitchen

At The Pig and the Lady in Chinatown, James Beard rising star nominee Andrew Le cooks up fresh, vibrant Vietnamese cuisine inspired by the food his mother, known as Mama Le, cooked while he was growing up in Honolulu. You can learn more about the family’s inspiring story here.

Behind the bar, Matty Kua has created a playful cocktail menu that builds on the flavors coming from the kitchen. Two of his concoctions feature Kō Hana’s agricole rum.

The Rumaway Club (featured in the video here) pairs Kō Hana’s fresh, vegetal rum with cinnamon, grapefruit and calamansi (also known as calamondin or Philippine lime), garnished with dried lime.

The pretty-in-pink Le Swoon mixes Kō Hana’s rum with purple Okinawan sweet potato, pandan, coconut milk, cinnamon, lime and Aphrodite bitters. Pandan is a plant widely cultivated in Asia known for its beautiful aroma — in fact, it’s used as an air freshener in Thailand and is also used in perfumes.
